The Copper Skillet runs on one stubborn idea: if it can be made from scratch, it will be. Biscuits folded before sunrise. Gravy that never met a packet. Chicken brined overnight and fried in the same cast iron pans we season every single day.
We cook breakfast through dinner, one long day of service, because the neighborhood does not eat on a schedule and neither do we. Come in at nine for the hash. Come back at seven for the short rib. The skillets never really cool down.
